The birth of The Incubator in Smith Street Collingwood, is an incredible story of serendipity that Fixation Brewing was established upon. Proudly part of the Stone & Wood family, The Incubator is a fresh, modern & upmarket brewery designed purely as a tasting room for Fixation’s dedication to Indian Pale Ale’s (IPA’s). Fixation are obsessed with delivering the freshest of IPA’s to their patron’s and the design brief had to deliver just that. Fitted out with a 600 litre brewing system and ten taps, customers can enjoy an interactive experience sitting literally metres away from the brewery. The ambience is aseptic industrial, renouncing the common approach of the modern brewery, dark, grungy and exclusive.

The relaxed and inclusive approach is further demonstrated with floor to ceiling warehouse windows, inviting passers-by to pop in and to even bring their own food from the incredible offerings on Smith Street. The seating options are extensive, flexible and practical including a long concrete bar fitted with a huge stone top and marble topped high benches, as well as olive green banquettes. Visual Builders together with Tecture, have converted this vacant graffiti covered warehouse, into a gleaming and precocious venue. The first of its kind in Australia.
